Ingredients

Cake and Topping Ingredients

  • All-Purpose Flour — 2 ½ cups
  • Granulated Sugar — ¾ cup
  • Brown Sugar — ½ cup, packed
  • Cinnamon — 2 teaspoons
  • Nutmeg — ½ teaspoon
  • Fresh Apples (peeled, cored, chopped) — 3 medium
  • Unsalted Butter, cold — 1 cup (2 sticks)
  • Eggs — 2 large
  • Vanilla Extract — 1 teaspoon
  • Baking Powder — 1 teaspoon
  • Baking Soda — ½ teaspoon

Maple Glaze Ingredients

  • Pure Maple Syrup — â…“ cup
  • Powdered Sugar — 1 cup

Instructions

  1. Prep Your Apples: Peel, core, and chop the apples into small, bite-sized pieces. Toss them with a little cinnamon and sugar to allow the flavors to meld while preparing the batter.
  2. Make the Crumb Topping: Combine flour, brown sugar, cinnamon, and cold butter. Use your fingertips or a pastry cutter to blend until the mixture forms coarse crumbs. Set aside.
  3. Mix the Cake Batter: In one bowl, whisk together eggs, granulated sugar, and vanilla extract. In another bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, and nutmeg. Gently mix the dry ingredients into the wet ingredients, then fold in the prepped apples.
  4. Assemble the Cake: Pour half of the batter into a greased cake pan. Sprinkle half of the crumb topping evenly over the batter. Add the remaining batter on top, then finish with the rest of the crumb topping.
  5. Bake to Perfection: Bake the cake at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted in the center comes out clean and the crumb topping is golden brown.
  6. Prepare the Maple Glaze: While the cake cools, whisk together the powdered sugar and pure maple syrup until the glaze is smooth and pourable.
  7. Drizzle and Serve: Once the cake has cooled slightly, drizzle the maple glaze over the top. Allow the glaze to set for a few minutes before slicing and serving.

Notes

  • Use tart apples such as Granny Smith or Honeycrisp for the best balance of sweet and tart flavors.
  • Keep the butter cold to achieve a crumbly, crunchy topping.
  • Do not overmix the batter to maintain a tender cake crumb.
  • Allow the cake to cool completely before applying the glaze to prevent it from running off.
  • Store any leftover glaze refrigerated and use it as a delicious drizzle over pancakes or oatmeal.
